She explores the hidden dangers of mycotoxins in processed foods, highlighting their impact on health. With a blend of personal stories and clinical insights, Gonya simplifies complex science, empowering readers to understand how mycotoxins affect gut health, immunity, and overall well-being.

About the Author

Susan Gonya is a licensed dietitian, registered nurse, and researcher with more than 30 years of experience in healthcare. She holds advanced degrees in both nutrition and nursing, including a master’s degree in evidence-based nursing, as well as a degree in Early Childhood Development and Family Interaction. Her professional focus includes food safety, gastrointestinal health, and the treatment and prevention of chronic diseases, grounded in both clinical practice and scientific research.

Susan’s career began in early childhood development and teaching, where her passion for supporting children’s health and development took shape. However, she was equally passionate about nutrition and food product development.  Because of this, she soon transitioned into the foodservice industry, founding a successful muffin company that offered nutritious, whole-food options—well before “clean eating” became popular. This led to a role as a foodservice marketing consultant for a major food processing company, but her disillusionment with the industry’s disregard for health over profit inspired a career change. Susan returned to school, became a registered dietitian, and dedicated herself to promoting honest, evidence-based nutrition.

She has since developed and led weight management and allergy-friendly programs, taught cooking classes, and researched the links between processed food and pediatric obesity. Later, Susan added nursing to her credentials—graduating with top honors—and ultimately earned a second master’s degree in evidence-based nursing to deepen her clinical and research expertise. Her work in intensive care units allowed her to apply her combined knowledge of nutrition and medicine in high-stakes settings, contributing to published work in Hospital Practice.

Susan’s most personal and transformative work began when her young son was diagnosed with Crohn’s Disease. Motivated by a mother’s love and a scientist’s determination, she began investigating environmental and foodborne toxins—especially mold toxins in food—and their potential connection to autoimmune and inflammatory diseases. Her findings have been published on ProQuest, in the International Journal of Environmental Research and Public Health, and she recently published her first book, The Fungus Among Us, on the topic, which is a profoundly personal account of her family's journey looking for answers for her son. She continues to develop practical, science-based strategies to help families reduce exposure to these hidden threats.

Warm, approachable, and deeply committed to the health and safety of not just infants and children but adults as well, Susan is passionate about helping families find clean, safe food and empowering them with the knowledge and tools they need to thrive. Her message is simple: Let food be thy medicine—not thy poison.
